Pho (Vietnamese Noodle Soup)

Pho noodle soup is another one of our favorite foods to eat, and it originates from Vietnam. In its simplest form, pho is made with rice noodles, beef broth and your choice of meat(s) with condiments (i.e., lime, cilantro, bean sprouts, jalapeno, chili sauce, etc.) on the side to enhance the flavor. Everything is not so simple sometimes, and some restaurants and recipes change things up a bit by using different types of noodles like thick or thin rice noodles or vermicelli noodles, different proteins to add like seafood or chicken, and different broth ingredients instead of typical beef broth. My favorite version is pho tai (rice noodle soup with rib-eye steak) with a lot of the red rooster chili sauce in it, and my drink to go with it is a Vietnamese iced coffee drink called “ca phe sua da”. My wife likes the pho seafood versions while the kids like it with chicken. Also, eat it with some crispy spring rolls if you are very hungry.
